Masque in Mumbai is being listed on the One To Watch for Asia’s 50 Best Restaurants list in 2020, within four years of its debut, and then debuting at the 32nd spot on it in 2021, Masque is a must on this list. A “wilderness-to-table” restaurant, it is located at one of Mumbai’s old cotton mills.
Entrepreneur Aditi Dugar opened the ingredient-driven restaurant Masque, which is tucked away in one of Mumbai's historic textile mills. Head Chef Varun Totlani is in charge of the kitchen.
The restaurant offers 10-course chef's tasting menus, which are the first of their kind in India. The menus are determined by ingredients gathered from local farmers, producers, and foraging excursions, and they change with the seasons.
The cuisine at Masque is the result of the team's persistent efforts to highlight regional delicacies and maximize the flavor of the abundance of Indian produce. This commitment has been strengthened with the opening of the restaurant's R&D and test kitchen, Masque Lab, in 2020.
